The paper includes the main resultsobtained in the domain of the processing of the forestfruits in a microwave field and hot air. It has thecharacter of an applicative research, the obtainedresults being of practical use, with the main purpose ofoptimizing the functioning of some heating devices in amicrowave field.This analysis is efficient but it implies the exactknowledge of the dielectric and thermal properties ofthe material that is to be processed, and also thedependence of these properties on the temperature.
