ABSTRACT
The knowledge that antioxidants play in inhibiting the free radicals resulting from cellular metabolism,has stimulated interest in the analysis of these compounds in various food products. The aim of this studywas to quantify the total phenolic compounds and its correlation with antioxidant activity, to determinethe antioxidant properties of honey produced by Apis mellifera L. the Pantanal. Were examined twentyfive samples of honey multiflora, collected in the Pantanal of Mato Grosso do Sul, only two experimentalfarms (Nhumirim and Band’Alta) with different geographical characteristics.
